D: restaurant- husband wanted sushi. i had a cucumber salad, a seaweed salad, and a big pile of ginger.
Oh the ginger at sushi places! I love it! At the cafe we always do a Japanese theme for Valentines and I have made pickled ginger a couple of time for it. I slice fat ginger roots extremely thinly with a mandoline and then marinate them in agave, apple cider vinegar and a touch of salt all mixed into water to form a brine. The first year it was *WAY* too spicy, so this year I changed out the brine daily. It definitely cut the spiciness, though it was still strong. Next year I'm going to start 2 weeks in advance, with the same procedure. It's also fun to add a couple of slices of beet to the brine to make pink ginger. 🙂
