Inspired by fake meat and mythical creatures brings us to Portland where there exists, the Uni-Cart. At SW Ash & 3rd.

On Mother's Day we went to the Japanese Gardens and everywhere you looked was beauty. Highly recommended.

24 ounces water

B: strawberries, little fig jam, dark chocolate

yoga: 108 sun salutations

S: half lara bar, piece of dark chocolate & I made a green smoothie for now and later with water, spinach, blueberries, pineapple, banana, mango, vanilla stevia & lucuma.

One hour of treadmill intervals w/weights in hands, side shuffling, sprinting, inclines, ab work.

L: More of the green smoothie, 2 heart shaped cookies from One Lucky Duck

24 ounces water

D: Amazing dish I added/improvised on from the latest VegNews email newsletter called Ethiopian Chickpeas. This was savory and delicious and I have leftovers. I omitted the potatoes and peas for what I had on hand- kale and green beans and made it very spicy. I also added double or more of the tomato paste to give it a creamier consistency. I ate a large yummy bowl with a whole wheat tortilla as a sub for injera. I hope the husband wants to try the leftovers because it is goooooooood!

DS: A raw vegan brownie bite made here locally in Portland.

This is our third spring spent in Portland and here are some very seasonal photos:

Liberty Of London nightgown which I wear as a dress with Free People bloomers:

Eliot pushing his baby, Nola in a baby doll carriage that belonged to me when I was a little girl. He insisted on pushing her to the park last week.

Flowering tree on our street with the afternoon moon high in the sky. Just wait until I post pics of our two pink trees in front of our house! They are dark, gothic and dry looking for most of the year and for a short time in the spring they bloom in cotton candy bursts!

I'm cheating here on my Portland post and adding a photo from my family's garden in California:

A couple weeks ago it was my birthday. Here's my delicious vegan chocolate cake from Back to Eden Bakery Boutique and my lovely outfit.

This dress was made by my friend Ann Hymas and I hesitated posting this photo because I think the dress is so very beautiful with intricate details that the picture just doesn't show- but here it is anyhow. Maybe I'll try another day for a better shot.

I'd heard about Women for Women International a few times while watching Oprah and had felt drawn to the organization. Then last month when Lisa Shannon was a guest on Oprah, again talking about WfWI I decided that that was it, I was going to become a sponsor. That night I got online, signed up for my commitment to send money each month to my new sister (that I asked to be randomly assigned to) and agreed to start writing letters too.

Shannon lives in Portland and writes, speaks and raises money for women in the Congo through WfWI and as luck would have it the fabulous Food Fight (our local vegan grocery store here in PDX) and their Let Live series had invited her to speak. Not so lucky was my household coming down with swine flu (don't even get me started about the irony and unfairness of my 2 out of 3 veg home having pig flu!) so I didn't get to attend, but Food Fight recorded it and put it up on their site! Worth the time to watch here is the link to last Sunday's talk:

In the video Shannon explains where my $27 monthly donation goes:
*$10 to spend
*$5 to save
*$12 for training on nutrition, family planning, literacy and much more

What motivated me to be a part of this? I really care about our world and I have the means to share. I feel so blessed and lucky to do so. I spend almost $27 a month on my gym membership and now I will be matching that to give to a person in need, how awesome is that? And there's more! I really believe that for myself working on kindness and connection with the people I see everywhere I go, looking people in the eyes, speaking to people and treating people the way I want to be treated is what changes the world; brings out the best in all. The basics of love. Being love. And spreading love.

Thank you to Women for Women International!
